Mango salsa is easy to make. Just peel, pit and and dice a large sweet mango and chop half a red onion. Chop a medium-size jalapeno or other chili very fine, with or without the seeds as you wish. Combine all with ½ cup chopped cilantro and the juice of 1 or 2 limes. Season with salt.
Mango sherbet is easy to make and very refreshing to eat. Choose a large, very ripe mango. Peel, pit and slice up the flesh. Purée in a food processor or blender and add the juice of an orange or two. Stir in ¼ cup sugar (superfine works best here) and a dash of vodka if desired. Season with a squeeze of lemon or lime. Pour into a container and chill in the refrigerator before freezing in your ice cream maker.
Or pour the mixture into a shallow pan and partially freeze in the freezer. Place in a bowl and beat with a hand mixer until light and return to the freezer.
