Shallot Vinaigrette

Makes enough for 4 handfuls of baby greens

1 Tbsp wine vinegar, or wine vinegar plus a little balsamic

1 small shallot, minced

Pinch of salt and fresh-ground black pepper

3 to 4 Tbsp extra-virgin olive oil

Mix the vinegar, shallot, salt and pepper in a small bowl. Whisk in the olive oilto taste.

You may add a little minced garlic, chopped fresh herbs, a little Dijon mustard.

You can substitute hazelnut or walnut oil for part of the olive oil.
