Simple tomato sauce

Peel and slice an onion, a small carrot and half a head of garlic and stew in olive oil until tender. Add 2 pounds of coarsely chopped tomatoes, a bay leaf, 2 thyme sprigs and a few stems of fresh basil. Cook for 45 minutes to an hour. Be sure to stir often to prevent scorching. Pass through a food mill or conical sieve before using.
